    Founded in 1982 on Akigawa-kaido, Minmin is one of the shops that put Hachioji ramen on the map, in the line of Hatsufuji, said to be the style's originator. Its soup pairs a quickly simmered meat stock with dark soy tare and the shop's own original lard, at old-school prices.
