    A niboshi specialist near Ochiai run by a self-taught owner raised on the Tsubame-Sanjo ramen of Niigata. Its 'pure niboshi soba' uses a 100% dried-sardine stock, and it has topped the TRY niboshi category three years running according to the shop's mail-order listing.
