    A Nishi-Ogikubo shoyu ramen specialist since 2015, built around shamo (Japanese gamecock), which gives the soup a deep, concentrated chicken savour sharpened by a crisp soy tare. Niboshi soba, tsukesoba and mazesoba round out the menu, and a Monday-only limited bowl has a following of its own.
