    A shitamachi back-fat ramen house with four Tokyo shops, often credited as an originator of the seabura style. Fresh domestic pork back fat is melted to just short of liquid and showered over a pork-and-chicken broth with strong shoyu tare, so it looks heavy but drinks lighter; miso and shio versions too.
