    Akabane's go-to for soupless tantanmen: thick house-made noodles tossed with sansho and eight other spices, plus komatsuna, bean sprouts, minced meat, fried noodle bits and nuts, at the chilli and sansho levels you choose. The shop began in Shimo in 2011 and moved beside Akabane Station in 2016.
