A basement shop at the Gotanda end of Yamate-dori known for hand-made noodles cut to order: very thick, flat, wavy strands in a clear shina soba. Bowls come as soy-based shina soba or a shiro-dashi (white stock) version, with the deluxe tokusei bowl around ¥1,250.

It's in the basement (B1F) of Nishi-Gotanda Sign Tower at the Route 1 / Yamate-dori corner. Expect a queue of 20 minutes or so at peak; a few counter seats plus one 4-person table. Evening service ends when the soup runs out.
