    A Jimbocho tantanmen specialist opened in 2018 by the chef who, with his father, ran the kitchen of Shibuya's 51-year-old Asuka for more than five decades. The signature is a clean, moderately spicy tantanmen topped with a paiko pork cutlet, marinated shoulder loin coated three times and fried to order so it stays crisp in the soup.
