    A niboshi shop a couple of minutes from Ebisu Station's west exit, whose house niboshi soba is made from a blend of seasonal dried sardines with no animal stock, served with snappy low-hydration thin noodles. Both chicken and pork chashu top the bowl, and specials like a grilled flying-fish (ago) soba appear often.
