    Kaedama: How Noodle Refills Work (and Where They're Free)

    Never let your broth go to waste. Master the art of 'kaedama' — the Japanese system of ordering extra noodles — including etiquette, pronunciation, and top shops.

    You have just polished off a beautiful bowl of tonkotsu ramen. The noodles are gone, but you still have a generous pool of rich, steaming pork broth left in your bowl. Do you drink it all and call it a day? Not if you are in a tonkotsu shop. In Fukuoka and many modern ramen establishments across Japan, you can order a 'kaedama' (替え玉) — a fresh, hot portion of noodles dropped straight into your remaining soup. It is one of the greatest customisation features of the ramen world.

    What is Kaedama?

    Kaedama originated in the Nagahama district of Fukuoka. The local dockworkers needed a fast, cheap meal that would not get soggy. Because thin tonkotsu noodles soften quickly in hot broth, chefs started serving smaller initial portions of noodles, allowing diners to order fresh, firm refills as they ate. Today, this system has spread nationwide, particularly in shops serving thin, Hakata-style straight noodles.

    The Golden Rules of Ordering Kaedama

    Ordering a refill is simple, but there is an unspoken etiquette you must follow to avoid looking like an amateur:

    1. Do not drink your broth!: This is the most critical rule. Kaedama is just dry noodles. If you drink all your soup, you will be left with a dry plate of noodles and nothing to dip them in. Keep at least half of your broth in the bowl.
    2. Time it correctly: Do not wait until you have finished your last bite of noodles to order. It takes about 60 to 90 seconds for the chef to boil fresh noodles. Order when you are about 70-80% done with your first portion so the transition is seamless.
    3. Specify your firmness: When you order, the staff will often ask how firm you want your noodles. Matching the firmness to your taste ensures the perfect chew.

    Noodle Firmness Levels to Know

    • Bari-kata (超硬め / Very Firm): Popular with regulars. The noodles are boiled for just 15-20 seconds. They retain a solid bite and do not get soggy in the remaining broth.
    • Kata (硬め / Firm): The recommended choice for most diners. Offers a pleasant toothsome texture.
    • Futsuu (普通 / Regular): The standard default style.
    • Yawa (柔らかめ / Soft): Boiled longer, yielding a tender texture.
    💡 💡 Pronunciation Guide: To order, simply raise your hand slightly and say: <em>'Kaedama kudasai!'</em> (替え玉ください — 'Kaedama please!'). If you bought a ticket for it at the machine, place the ticket on the counter instead.

    Where Noodle Refills Are Free (or Incredibly Cheap)

    While standard shops charge between ¥100 and ¥200 for a kaedama, some budget-friendly chains have built their entire reputation around free refills. If you are travelling on a budget, look out for these spots:

    • Hakata Tenjin (博多天神): A legendary, no-frills Tokyo chain serving classic tonkotsu. Every bowl comes with one free kaedama. You simply shout 'kaedama!' when ready, and the chef drops it in. It is one of the best value meals in Tokyo.
    • Fuunji (風雲児): Known for its thick tsukemen, but they also offer free noodle size upgrades (up to double) when you hand over your ticket.
    • Local Hakata Shops: In Fukuoka, many local shops offer kaedama for as little as ¥50 or ¥100, making it an incredibly affordable way to fill up.
    Remember to add a splash of ramen tare (soy-based seasoning sauce) or a spoonful of garlic and sesame seeds from the counter condiments to your bowl when the new noodles arrive. This revitalises the broth's flavour!
