    The Koike group's take on Yokohama iekei, opened in 2022 by founder Hiromitsu Mizuhara, who grew up eating iekei in Yokohama. Expect a refined, easy-drinking pork-and-chicken soy soup with flat medium-thick noodles, spinach and nori, plus a well-stocked condiment tray; it placed in the TRY 2023 new-shop tonkotsu category.
