    An Iekei shop near Kamiooka opened in March 2025 by a chef who trained two years at Musashiya and three at a Jiro-style shop. Unusually for Iekei, the soup-thinning broth (suppu-wari) is a dashi of mackerel, round herring and bonito, and the ramen took 3rd in TRY 2025 new-shop tonkotsu.
