Les restaurants de ramen ferment tout le temps, et les applis de cartes comme les annuaires mettent souvent du temps à s'en apercevoir. Voici les adresses de notre guide qui ont fermé à leur emplacement. Chacune garde sa page, avec la date de fermeture, les preuves et des restaurants ouverts à proximité, pour que vous le sachiez avant de faire le trajet.

Notre méthode de vérification
Nous vérifions chaque restaurant à partir de sources en japonais : les annonces du restaurant ou de son exploitant, les avis des lieux et des centres commerciaux, la presse locale, les annuaires de ramen et les témoignages directs. Chaque fermeture indiquée ici porte l'un de ces deux niveaux de preuve :
- A: Preuve solide : le restaurant, son exploitant, un lieu ou un article de presse daté
- B: Preuve fiable : une fiche d'annuaire de ramen ou un témoignage direct
Les signalements que nous n'avons pas pu confirmer, ceux où les sources se contredisent ou ceux où nous ne savons pas avec certitude de quel restaurant il s'agit ne sont pas marqués comme fermés. Ces restaurants sont revérifiés en priorité.
Une fermeture concerne une seule adresse. Quand une succursale d'une chaîne ferme, la marque et ses autres succursales ne sont pas concernées, et quand un nouveau restaurant ouvre dans les mêmes locaux, c'est un autre restaurant : nous ne relions pas les deux. Nous ne donnons une date que lorsqu'une source l'indique ; sinon, la date dit ce que l'on sait, par exemple « vers novembre 2017 » ou « inconnue ».
