The 2002 shop that helped turn rich pork-and-seafood ramen into a Tokyo-wide craze, run by ramen producer Juan Watanabe. Its thick tonkotsu-gyokai soup, inspired by three earlier shops, is paired with thin, low-hydration straight noodles, big-cut bamboo shoots and thick chashu.
