    One of Tokyo's most popular Jiro-style ('G-kei') shops, opened in December 2020 as a new venture from the team behind Chuka Soba Izuru in Daimon. The gently emulsified pork-and-vegetable soy soup, chewy house-made flat noodles and two thick slabs of soft pork keep queues long; it placed second in the TRY 2021 rookie tonkotsu category.

Free toppings (vegetables, garlic, back fat, extra seasoning) are called when your bowl is ready.
