    The Negishi flagship of Kimihan, open since 2010 and devoted to 'Edomae' niboshi chuka soba. The shoyu soup puts sardine aroma up front with a pleasantly bitter, savoury, grown-up depth and little harshness, and a well-regarded tsukesoba sits alongside.
