    A Hongo tsukemen shop opened in May 2021 by a former senior cook at Menya Itto, serving beautifully combed noodles sitting in kombu water with your choice of dipping sauce, such as oyster shio or shoyu. Start with the noodles alone, then with sea salt and wasabi, before dipping.

    Kombu-sui Tsukemen (昆布水つけ麺)

    Opened May 2021 (Instagram reel and a 2021 blog), so the input's 2015-guide source label looks wrong; check. Price ¥1,300 for 300 g from a Jan 2025 review and Takumen; one Retty review cites ¥1,500. Online reservation = TableCheck paid fast pass. Tier 1 is my judgement from queue and media coverage; no award found.
