    A February 2024 opening near Iriya where a chef with French, Chinese and ethnic kitchen experience builds ramen on a clarified consommé of venison and chicken. Shio adds shiitake and kombu, shoyu adds seafood dashi, with hand-massaged house-made noodles and two styles of chashu, one smoked.
