Ippudo in Japan: The Fukuoka Original and Its Shops Abroad

    一風堂 · started in Fukuoka

In Japan, on this site: Ippudo Minatomirai Tokyu Square, Yokohama. More Ippudo shops below

    Where it started

Shigemi Kawahara opened Hakata Ippudo in Fukuoka's Daimyo district on 16 October 1985. A branch in the Shin-Yokohama Ramen Museum in 1994 took it to the Tokyo area, and the first Tokyo shop opened in 1995. In 1996 it launched the two bowls it is still known for, Shiromaru Classic and Akamaru Modern.

    The style

Hakata-style tonkotsu with thin, straight noodles. Shiromaru Classic is the original creamy pork broth. Akamaru Modern uses the same broth with Ippudo's red miso paste (umami-dama) and garlic oil.

Abroad, Ippudo usually runs sit-down restaurants: the US site lists sushi, sake and cocktails beside the ramen.

    Ippudo outside Japan

New York was Ippudo's first shop outside Japan. Hong Kong followed in 2011; Taiwan, mainland China and Australia in 2012; and London in 2014, its first in Europe.

    Eating Ippudo in Japan

Ippudo opened in Daimyo, central Fukuoka, in 1985, and its Daimyo headquarters shop was remodeled for the 25th anniversary in 2010.

Around Tokyo the same company also runs TOKYO Tonkotsu BASE MADE by Ippudo, a separate brand; two of the Ippudo-group shops listed on this site are that brand.

Ippudo reopened its branch in the Shin-Yokohama Ramen Museum in February 2024, if you want to see where it first reached the Tokyo area.
