Where to start in Japan: AFURI Ebisu, Tokyo. More AFURI shops below
Where it started
AFURI takes its name from Mount Oyama in Kanagawa, also called Mount Afuri, whose water it first used for its soup. It started as Zund-Bar, opened in 2001 at the foot of the mountain in Atsugi. AFURI Ebisu followed in 2003 as the first Tokyo shop, with an open kitchen and counter seats.
The style
A clear, light soup of domestic chicken and seafood, best known as yuzu shio ramen: salt-seasoned broth finished with yuzu citrus, served with charcoal-grilled pork.
AFURI makes its soups and tare at a central kitchen in Kiyokawa, a village near the mountain, and each shop finishes the bowls.
