Hakata Ikkousha in Japan: The Fukuoka Original and Shops Abroad

Where it started
Kosuke Yoshimura opened Hakata Ikkousha in Hakata in 2004. Ikkousha calls its soup the original awa-kei (foam style) tonkotsu. It began making its own noodles in 2008.
The style
The pork bone soup is cooked in two kettles, one mature and one young, with the young soup added to the mature one as it cooks.
Moving the bones works air into the fat and leaves a layer of fine foam on top. Ikkousha describes the result as rich without being heavy.
Hakata Ikkousha outside Japan
Ikkousha says it runs more than 60 shops in 10 countries, and Indonesia has the most. Several Indonesian branches, including Senayan City and Plaza Indonesia in Jakarta, are marked no pork on the official list, so the soup there differs from the pork bone original in Hakata.
