Tadaima Henshinchu and Salmon Noodle 3.0: French-Style Ramen from Tokyo, Abroad

    ただいま変身中 · started in Tokyo

Where to start in Japan: Tadaima Henshinchu (Nakano), Tokyo.

    Where it started

Chef Shota Saka (坂 祥太) spent 14 years in French cooking and worked up to sous chef at a two-Michelin-star restaurant. He brought those techniques to ramen, which the group sells as French ramen, and Tadaima Henshinchu in Nakano, Tokyo, is its oyster ramen shop. The company behind it, EN-PETIT (縁petit), also runs a salmon ramen brand, Salmon Noodle 3.0, whose main shop is in Kagurazaka, Tokyo.

    The style

The house bowl at Tadaima Henshinchu is oyster ramen, which the menu describes as oyster, sea bream and soy sauce in one broth. It has been on the menu since the shop opened.

The sides keep the French touch: a rice bowl with egg and Hiroshima oysters with tartar sauce, and white wine next to the beer.

Salmon Noodle 3.0 makes its soup from whole salmon, flesh and bones. The Indonesian branches serve halal-certified ramen.

    Tadaima Henshinchu outside Japan

Abroad, the group's shops do not use the Tadaima Henshinchu name. This list comes from the FRENCH RAMEN MAP flyer in the Nakano shop (October 2026), with the Indonesian branches from Salmon Noodle 3.0 Indonesia's own site. Places marked coming soon had not opened when the flyer was printed, and pop-ups run for a limited time. Tadaima Henshinchu itself also ran a pop-up in New York in 2020.
