Vegetable-led ramen shop "non è ramen" opens 26 October in Akasaka
A vegetable-led ramen shop opens in Akasaka on 26 October 2026, serving a salt-koji ramen made with more than 15 vegetables.
non è ramen (non è らーめん, said "none ramen") opens on Monday 26 October 2026 on the ground floor of Tokyo Noson (東京農村), a hub for Tokyo farming at 3-19-1 Akasaka, Minato-ku. It is run by Go beyond vegetable Inc. with Minna no Inc., and most of its vegetables come straight from farmers the team has visited.
The bowl
The signature "vegetable and salt-koji ramen" uses more than 15 vegetables, served raw, grilled, boiled or fried. The broth is vegetable stock blended with salt koji, dried shiitake, kombu, katsuobushi, ago (flying fish), mekabu seaweed and camellia tea. The thin noodles are made to order from Hokkaido wheat (Yumechikara and Kitahonami) with some whole wheat. It costs ¥1,181 plus tax at lunch, or ¥1,400 plus tax at dinner, when it comes with a small side dish.
Note for vegetarians: going by the published ingredients, the broth includes bonito and flying fish, so it is not a vegetarian bowl.
Evenings and hours
In the evening the shop runs a "yasai kakuuchi", a casual standing bar serving seasonal vegetable snacks with drinks. On some days the farmers who grew the vegetables work the counter.
