    Best for

Founded in 2001, Kisaku is the recognized originator of Hiroshima's soupless tantanmen boom. The master created the dish after studying Sichuan culinary techniques, layering housemade chili oil, dark sesame paste, spicy ground pork, and freshly ground Sichuan peppercorns (huajiao) beneath thin noodles. Diners mix the contents thirty times before eating, finishing with white rice added to the leftover sauce.
