The master extracts umami from Kumamoto Ushibuka dried sardines and Hokkaido kombu, balanced with light soy tare and fragrant chicken fat. Silky Hokkaido wheat noodles float beneath pink sous-vide pork shoulder, seasoned bamboo shoots, and purple onions.
