The kitchen crafts complex soups including clear shio dashi from sea bream and clams, whole roasted lamb bone dipping broth, and A5 Miyazaki Wagyu shoyu ramen. Custom bowls arrive with edible flowers, seasonal vegetables, and low-temperature duck slices.
