The rich soup blends pork bone stock, dried seafood, and local fermented miso, topped with a fiery sphere of scarlet red pepper and garlic miso paste. Diners gradually dissolve the red paste into the hot broth to modulate the spicy garlic kick. Thick, wavy noodles kneaded by hand have a chewy elasticity that stands up to the rich soup.
