    Best for

Mendokoro En occupies a renovated traditional kominka farmhouse in the countryside of Kitakata. The kitchen brews an amber shoyu broth from clear pork bone dashi, domestic chicken, and dried seafood. The highlight is the ultra-high hydration curly noodles, kneaded and aged to create a springy, bouncy slurp. Thick slices of tender braised pork belly and crunchy menma complete the bowl.
