Best for
Jikaseimen Ito operates in a quiet basement counter in Ginza, three minutes from Higashi-Ginza Station. Rooted in the legendary Akita lineage of the Ito family, the shop strips ramen to its fundamental elements. The standard bowl consists purely of clear, concentrated dried sardine dashi, a nest of in-house thin straight noodles, and chopped scallions. The noodles deliver a crisp, toothsome snap. Meat lovers can order the Niku Soba for four tender squares of simmered pork belly.
Chashu Chuka Soba (肉そば) & Pure Niboshi Dashi

Walk down the stairway to the basement floor. Purchase tickets at the machine near the entrance before sitting at the counter. Cash only. The standard bowl has zero meat toppings; select Niku Soba (肉そば) if you want chashu pork.
