Best for
Chuka Soba Haru operates one minute from Iriya Station and seven minutes from JR Uguisudani Station in northern Taito ward. Founded by a direct disciple of Tokyo dried sardine temple Ibuki, the kitchen extracts clean, intense marine umami from Ibuki iriko sardines and kelp without bitterness. Diners choose between the lighter standard Chuka Soba and the opaque, gray-toned Noko Niboshi bowl. Murakamiya Seimen produces the signature toothsome, low-hydration noodles.
