Best for
Mugi to Olive earned Michelin Bib Gourmand honors for its clam-infused broths in central Ginza, four minutes from Higashi-Ginza Station. The signature Hamaguri Soba extracts clean, sweet dashi from live hard clams shipped daily from Kuwana in Mie Prefecture, enriched with Daisen chicken stock and olive oil. Square-cut noodles from Kyoto's Menya Teigaku provide a firm, snappy texture. Bowls are garnished with low-temperature pork chashu, chicken breast, steamed clams, and twisted fried fish cake.
