The soup marries Daisen chicken carcasses and pork bones with fragrant pork lard and clear soy sauce tare. The thick, wavy noodles provide an energetic chew that traps the amber broth. Topped with wood-smoked pork chashu, tender wontons, and sweet bamboo shoots.
