    Best for

Ginza Hachigo holds a Michelin 1-Star ranking under veteran chef Yasushi Matsumura, located three minutes east of Higashi-Ginza Station. The kitchen eliminates tare sauce entirely and brews a clear golden consommé directly from whole ducks, Nagoya Cochin chickens, cured French prosciutto ham, dried scallops, and shiitake mushrooms. Salt from French Guérande salt flats and prosciutto cure provide the entire savory foundation. Master noodle maker Kenichi Karasawa at Asakusa Kaikaro produces custom thin noodles that absorb the broth. Finished with freshly ground French pepper over slow-braised pork loin chashu.
